Colonial-era houses in villages framed by mountains, serving local cheeses with maple syrup drizzled on top, local salmon or lake trout from Lake Champlain or tender quail or pheasant from the forests satisfy the most salacious taste buds. Vermont in fact means green mountains, monts verts in French, and the influence of neighbour Quebec adds a special charm to this state of unspoiled scenery and simple pleasures.
